
I’m usually very busy, so I don’t spend much time in the kitchen, even though I truly enjoy cooking. But whenever I do have time to cook, I like to prepare dishes that my whole family enjoys.
Today, I’d like to share one of my favorite simple recipes: soy sauce marinated eggs. Soy sauce marinated eggs, also known as Ajitsuke Tamago, are a popular topping for ramen and rice bowls. It’s an easy dish, but full of flavor and perfect to make at home.
Everyone has a different taste, so feel free to adjust the seasoning to your liking. You can add more or less soy sauce, a little extra sugar, garlic, or even some chili if you like a bit of heat. I personally enjoy being creative in the kitchen, so you don’t have to follow my recipe exactly.

Ingredients
- 4–6 eggs
- 3 tablespoons soy sauce
- 1 cup water
- 1 tablespoon sugar
- 2 cloves garlic, minced
- 1 small chili (optional)
- 1 teaspoon sesame oil (optional)
- Green onions for garnish (optional)
Instructions

- Bring a pot of water to a boil and gently add the eggs.
- Cook the eggs for about 6–7 minutes for soft-boiled eggs with a slightly runny yolk.
- Transfer the eggs to a bowl of cold water to stop the cooking process, then carefully peel off the shells.
- In a bowl, mix together soy sauce, water, sugar, minced garlic, chili, and sesame oil. Stir until the sugar dissolves.
- Place the peeled eggs into the sauce, making sure they are fully covered.
- Let the eggs marinate in the refrigerator for at least 2–4 hours, or overnight for a stronger flavor.
- Cut the eggs in half and enjoy!

Soy sauce marinated eggs are very versatile and can be enjoyed in many ways. They are delicious with steamed rice, ramen or noodles, or as a topping for rice bowls and salads. You can also enjoy them as a simple snack.

Tips
- For the best texture, cook the eggs for about 6–7 minutes so the yolk stays soft and creamy.
