Today I’m sharing one of my go-to cozy recipes — creamy pumpkin soup. It’s simple, healthy, and honestly one of those dishes that just makes you feel warm inside. I love making this on slow days or when I want something light but comforting.

🌿 Ingredients

- 500g pumpkin (peeled and chopped)
- 1 small onion
- 2 cloves garlic
- 200ml milk (unsweetened)
- 500ml broth (chicken or vegetable) or water
- 2 tablespoons heavy cream (optional)
- Salt and pepper
- Olive oil or butter
👩🍳 Instructions

1. Prep everything
Peel the pumpkin, remove the seeds, and cut it into small cubes. Chop the onion and garlic finely.
2. Sauté
Heat a little olive oil or butter in a pot. Add the garlic and onion, and cook until it smells really good and slightly golden. Then add the pumpkin and stir for about 3–5 minutes.
3. Cook
Pour in your broth (or water — more on that below 👀). Bring it to a boil, then lower the heat and let it simmer for about 15–20 minutes until the pumpkin is soft.
4. Blend
Use a hand blender (or a regular blender) to blend everything until smooth and creamy.
5. Finish
Add milk, stir well, and season with salt and pepper. If you want it extra rich, add a little heavy cream.
💧 No Broth? No Problem!
If you don’t have broth at home, don’t worry at all — you can absolutely use plain water.
Pumpkin has its own natural sweetness, so the soup will still taste really good. I actually do this quite often when I want a lighter, cleaner flavor.
To make it extra tasty, just:
- Sauté the onion and garlic well (this is key!)
- Add a bit of butter or olive oil
- Season a little more carefully
- Optional: add carrots or a splash of milk for more depth
It still turns out cozy and delicious, promise 💛

Pour your soup into a bowl and enjoy it while it’s warm. I love adding a little cream on top or having it with toasted bread on the side.
💡 Little Notes
- Add carrots for extra sweetness
- Use vegetable broth for a vegetarian version
- You can store it in the fridge for 2–3 days
