
Vietnamese bò bía is one of my favorite weekend snacks. It is simple, fresh, and full of flavor. The soft rice paper, sweet vegetables, savory Chinese sausage, thin egg slices, and rich dipping sauce make this dish perfect for sharing with friends or family.
Ingredients

For the rolls:
- Rice paper
- 1 Chinese sausage
- 2 eggs
- 1 cup jicama, shredded
- 1/2 cup carrot, shredded
- Lettuce
- Roasted peanuts, crushed
For the dipping sauce:
- 4 tablespoons hoisin sauce
- 2 tablespoons water
- 1 tablespoon sugar
- 1/2 tablespoon peanut butter
- 1 garlic clove, minced
- 1 teaspoon chili sauce
- 2 tablespoons roasted peanuts, crushed
How to Make Bò Bía

First, shred the jicama and carrot. Stir-fry them lightly until they are soft but still sweet and fresh.
Next, cook the Chinese sausage and slice it thinly.
Finally, beat the eggs, make a thin omelet, and cut it into small strips.
To make each roll, place a piece of rice paper on a flat surface. Add lettuce, jicama, carrot, egg, and Chinese sausage. Roll it tightly and neatly.
How to Make the Dipping Sauce

Add hoisin sauce, water, and sugar to a small pan.
Cook over medium heat for about 2–3 minutes and stir well.
Add peanut butter and mix until smooth.
Then add minced garlic and chili sauce. Cook for one more minute and turn off the heat.
When serving, sprinkle crushed roasted peanuts on top of the sauce.

Bò bía is a great snack for the weekend because it is easy to make, tasty, and fun to eat. It brings a mix of fresh, sweet, salty, and slightly spicy flavors in every bite.
